This is something I do all the time. My favorites are uni (sea urchin) and toro (fatty tuna underbelly). Unfortunately, they are also a couple of the most expensive items. I lived in Tokyo for many years, but I am now living in Hawaii where the Hawaiian version of sushi is an abomination (Ever try SPAM sushi? What are they thinking?). I still manage to get back to Tokyo at least twice a year, and may move back for good soon. Here is a shot of a sashimi platter with hamachi (yellow tail), shake (salmon), aji (herring?), amaebi (sweet shrimp), ika (squid), tako (octopus), kaibashira (scallops), and maguro (tuna).
