It is for medical reasons. TOO MUCH SALT. Even if I ask for no msg and don’t use soy sauce, that would not negate the problem. Salt makes me retain too much fluid which backs up around my heart, lungs and internal organs. The result is congestive heart failure.
The bright spot is that I can make some alterations to some dishes and come close to the original dish but only so close. Oh well, we choose our battles don’t we?
