#2. Monte Carlos

Ingredients:
1/2 cup (firmly packed) brown sugar
1 egg
1 teaspoon vanilla
1 1/4 cups self-raising flour
3/4 cup plain flour
1/2 cup coconut
raspberry (or fav. flavoured) jam

Filling:
60g butter
3/4 cup icing sugar
1/2 teaspoon vanilla
2 teaspoons milk

Method:
Preheat oven to 180c
Cream butter and sugar, add egg and vanilla, mix well.
Add sifted dry ingredients and coconut, mix well.
Roll teaspoonfuls of mixture into balls and place on lightly greased tray. Press down, and rough up surface a little with the back of a fork.
Bake 10-15 mins. until golden brown.
Cool on cake rack.
Place a teaspoon of jam, and a teaspoon of the filling mixture in centre of half the biscuits. Top with the remaining half and press together.

Filling method:
Cream butter and sifted icing sugar, add vanilla, gradually add milk and beat well.

Makes approx. 25 complete biscuits.

3. Choc Chip Montes

Use the same recipe as above – omitting the filling and jam.
Add a cup of choc chips after sifting dry ingredients and leave as single biscuits. Great for kids lunch boxes!! :)

This is an old recipe of my grandmother’s and a real family favourite either with the filling, or the choc chips.

#1 - Anzac Biscuits

Being an aussie this recipe just had to be my first entry on this goal :)

Ingredients:
1 cup rolled oats
1/2 cup sugar
3/4 cup flour
1 tablespoon golden syrup
1 teaspoon bicarb. soda
2 tablespoons boiling water
1/2 cup butter (melted).

Method:
Preheat oven at 160c.
Mix oats, sugar and flour.
Mix golden syrup, soda and boiling water. While frothing add melted butter and pour into the dry ingredients. Mix thoroughly.
Drop spoonfuls onto try (allow room for them to spread).
Bake for approx. 20 mins.

My children love to eat these warm straight out of the oven. Personally I love them most when they are hard and very crunchy.
