#4 Vegetarian Gumbo

Recipe from Justin Wilson’s Homegrown Louisiana Cookin’. It was sooooo good. It made a ton, too, so I ended up with a bunch of frozen dinners.
I also use his vegetable stock recipe all the time!

#3 Vegetarian "Chicken" Nuggets

From scratch, even! I came up with this while watching my little cousins chow down on store bought frozen chicken nuggets. I just knew I could come up with a meatless version that would be loads tastier than anything Tyson process and extrudes, lol!

I used one carton of firm silken tofu, drained, frozen, thawed and pressed.
Two Weetabix biscuits (or about a cup of crushed bran flakes, either way)
Garlic powder, cumin, paprika, and savory to taste.
Dash of salt and pepper
Splash of veggie stock to blend.

I mushed up all the ingredients together and shaped them in vaguely nugget forms.

In another bowl I crunched up another two Weetabix biscuits and mixed in some Season salt and dried onion bits. I coated the nuggets with this mixture (pressed it in pretty good, too, since tofu is pretty forgiving)

Then I tossed them on a sheet pan, spritzed them with olive oil and baked till they were heated through. I ate them with homemade honey mustard and they were delicious! The kiddos like them, too!

The family loved this, and my mom’s boyfriend had two helpings without realizing there was no meat at all in it. He still can’t believe it.



Yummy adventure! -Dish #1

My mom participated in the Daniel fast with some friends from work, and enlisted me to find some yummy and nutritious foods she’d still be able to eat.
I thought it would be really limiting, but once I got started, possibilities kept popping up everywhere and the new perspective made it very fun and exciting.
While the fast has been long over, I’ve started looking at how much meat and dairy I consume needlessly and thoughtlessly.
So I’m back to it! Not nearly as exclusive as the fast, though.
Tonight it’s my fave dish from mom’s fasting days!

Brown Rice Asparagus Casserole! It’s awesome stuff, super hearty and ridiculously tasty. I steam a little broccoli with the asparagus in my rice cooker’s steamer basket, making it quick and easy as well.
