purple cabbage with onions and sliced apples and a little apple cider vinegar. Salt and pepper to taste.
There’s this restaurant in Minneapolis that makes this yummy lime cilantro cabbage salad and I was hankering after it yesterday and thinking “I can figure out how they make that.”
So I did.
Here it is:
1 medium green cabbage
1 whole bunch of fresh Cilantro
1/2 c lime juice
1/2 c good olive oil
1 t salt
1/2 t black pepper
2 t sugar
Shred cabbage as finely as you can so it is like angel hair pasta. You really need a very sharp knife or a mandolin to do this. I did it in my food processor and it was not fine enough to quite get this salad I was aiming for but still tasty. Chop cilantro fine and mix into shredded cabbage.
Use a whisk to mix other ingredients in a separate bowl till the dressing is emulsified. Mix dressing into cabbage cilantro mix. Chill. Eat.
salad for lunch on Friday and at dinner Saturday and another big salad for lunch right now!
asparagus- it is in season now.
Water cress- I have discovered that you can lightly stir fry this with a little garlic and it is really yummy. I like it in sandwiches with cream cheese too or in a salad.
Also, I learned in nutrition class the other day that many of the good nutrients in a green veggies like this or broccoli need to be consumed with some fat in order to absorb some of the vital nutrients. So do put on some salad dressing, preferably with olive oil or go ahead, have a little butter.
ate leftover brown rice (grain)
and about 3/4 of a cup of leftover sauted swiss chard
and a banana and several strawberries mixed with yogurt
Finished making casserole for dinner: zucchini,onion, peas, red pepper, spinach, egg noodles, white sauce, canned salmon, some cheddar cheese grated on top.
out last night at one of our favorite local places. I had grilled marinated tofu with all these lovely veggies- baby boc choy, asparagus, red and yellow peppers, the best marinared musrooms ever!, Also so sort of toasted quinio (sp?) patty. Healthy and tasty and very satisfying, and pretty.
