With Corn-Jicama Salsa.
Another Cooking Light winner. When you cut the pork tenderloin up into little strips, it cooks super-quick and makes this a very easy dish. I love anything in a tortilla!
I am retiring this goal for now. It has helped me try a ton of new stuff. But now I want to focus on cooking regularly and bringing some of these dishes into rotation instead of only cooking once every two weeks

Back in the kitchen after a too-busy hiatus where I only made stand-bys. Chili-Cheese Black Bean Enchiladas from Cooking Light were delish! The best part was that it used soy crumbles instead of meat, but even the boyfriend was fooled. I’d never tried making enchiladas before, but these were really good and not as time-consuming as I’d always thought.

Things have calmed down so I’m back to having time for trying new recipes!
8/11: Mediterranean Salad with Chickpea Patties. I made lunch for my friend Jenni, a veggie. It was tasty, but I have trouble with low-fat patty-type creatures because they don’t hold together very well in the pan. Oh well, we enjoyed the chickpea lumps. They tasted the same!
8/3: Hearty Lasagna from Cooking Light. Another one that’s hard to believe it’s “healthy”! Yumm.

Yesterday I made Quinoa Tabbouleh as well as Cornmeal-Crusted Tilapia. The Quinoa turned out great but the tilapia kind of fell apart as soon as I tried to turn it or take it out of the pan. Still tasted good though!

The boyfriend, when asked, requested more Indian food, so I tried Cooking Light’s Pork Vindaloo. This was a “20-minute recipe” (which means it takes me 40…) and it came out really yum! It was so good that we ate it before I remembered to take a picture, so pic courtesy of some food stylist somewhere….

Another Cooking Light winner! Ground Turkey/veggies/cheese in a pizza dough crust. Hard to believe it’s “light” but 1 serving filled me up at 400 calories. Served it with a black bean salad. Satisfied my nearly chronic Mexican Food cravings!

This was my first ever attempt at Indian cooking! Amazing to believe that a year ago, I was convinced I couldn’t cook anything edible, and now I’m trying to cook Indian! I made a recipe out of Cooking Light for Murgh Makhani (or Butter Chicken) which isn’t that dissimilar to tikka masala. I served it over brown rice with some naan and a simple green salad. Yum! Quick, easy and yummy! With 12 grams of fiber, it also contributes to one of my newest goals (eat at least 25 grams of fiber each day).
The next day I also made tacos out of it. Yum!
