We recently made lasagnas again, cupcakes, a mushroom risotto and a white chocolate blondie. I just did some rice with mushrooms and cream.

I didn’t have enough gound almond so I mixed in gound hazelnuts. Nom!
I cooked this on a whim yesterday. It was quick and easy but made me proud nevertheless.
I need to allow myself more spare time and start cooking again!
But the asian supermarket was closed today so I couldnt buy the ingredients I didnt have.
Could do it tomorrow maybe.
With zucchini, eggplants, tomatos, garlic, onions (shallots in fact) and herbs (basil, rosemary and thyme).
We’ll see …
I cooked home-made bolognese pasta with mushrooms and tiramisu. And I felt quite proud of myself. And it was a nice meal (and a great time!)
Or maybe not even depressed anymore, I feel like cooking more often. I did a nice tomato rice 2 days ago (with grounded tomatoes, basil, mushrooms, onions, garlic and rice of course) and yesterday I did a hell of a shallot sauce for my steaks. I had NONE of the ingredients I needed (save for shallots, lol) so basically I made what you could call a MARTINI shallot sauce (martini standing for wine). And it was very very nice. I cooked the shallots, put some chicken instant cube thingie, xeres vinegar, black pepper, and 2 tablespoons of martini. And added water until the shallots were soft. Then I added a little cream. Yum! A little sweeter than usual shallot sauce, but great!
