As a Southerner and general food aficionado, I love me some Paula Deen. As a young married woman whose packed on 30-odd lbs since meeting her charming husband, I can’t in good conscience cook me some Paula Deen recipes. Except this one, which uses me favorite fish with a healthy technique. Okay, so the sauce ain’t the healthiest thing in the world but I may have to go for it.

Last night was probably the 5th or 6th time I’ve made this. It’s been great everytime. The chicken is Julia Child’s recipe, so it’s pretty foolproof. It’s also inexpensive, especially when the chicken is on sale, so that’s a double bonus.
The green beans are simmered with chunks of ham… I actually like to use ham boullion with this recipe because it’s less expensive and healthier, and still gives that smoky ham flavor that we southerners love with our green beans. But my local Winn Dixie has stopped carrying it for some reason, I can’t believe I have to go on a scavenger hunt among grocery stores to buy ham boullion.
Anyways, 2 meals down, 8 to go!
