Even “organic” food that you find in the grocery store might not be 100% organic like how you think it is. The laws for a food project to get the certified organic labeling are very wishy washy and there are A LOT of loop holes in the laws regarding organic projects. Do your research.
I know exactly what is in the vegetables I eat. I make sure to buy heirloom seeds, and harvest a small portion of seeds each year to start over with again during planting season. I do all my own canning. It is very time consuming.
