This is a very tasty, crisp and healthy appetizer.
I got the idea from where I work.
Start with 1-2 cucumbers (but I would have more because the way you cut them is kinda tricky)
Carrots
Green Pepper
Bok Choi (chinese cabbage)
and dont forget you can add or take away any veggies you would like with this!
and a homemade or premade vinaigrette.
(homemade makes it so much more better though [:)
To make the vinaigrette I mixed together (not in a metal bowl!)
Rice Vinegar
Extra Virgin Olive Oil
Grated Garlic
Sugar
Lemon Juice & a little bit of lemon zest
Black Pepper
Then slice your veggies and toss them up in the dressing!
The tricky part of this recipe.
Slicing the cucumber into thin long slices.
If they are to think in any spots when you start to roll them the cucumber will snap.
It was my first time and I learned the hard way!
Practice makes perfect though [:
After you do that, just grab a small veggie mixture and roll it on up in your cucumber slice.
Garnish with some lemon wedges and maybe some fresh greens for show!
Keep in mind about the picture!
It would look so much better if I was more experienced with slicing cucumbers that thin. I don’t have good knives for it so it was extremely difficult!
