This quiche doesn’t have the traditional pie crust. It bakes up fluffy and cheesy, though, and the veggies are crisp and flavorful. You can add spinach or broccoli or whatever kind of vegetables you prefer. For the ham, I just buy a thick pre-packaged slice and then dice it up. You could use bacon or any other kind of meat instead.
6 eggs
1/2 c. flour
1/2 c. milk
2 tbsp. melted butter
1 thick slice ham
1 green pepper
1 onion
2 c. shredded cheese
Dice the ham, green pepper, and onion. In a bowl, beat the eggs and milk together; add flour and melted butter. Fold in the diced ingredients and cheese. Pour into a greased 8X8 baking dish or a round glass casserole dish. Bake at 350F for 60 minutes. Let sit for 5 minutes, slice, and serve.

I always make this for the Super Bowl and other various parties throughout the year. You can add whatever veggies you want, of course. The cream cheese and sour cream combined with the re-fried beans make it warm, creamy and delicious! It’s obviously pretty fattening but you’re not eating the whole bowl (hopefully)...
2 cans re-fried beans
1 large tub sour cream
1 package cream cheese, softened
2 cups shredded cheese (I like cheddar)
1 tomato, diced
1 can black olives, chopped
Bunch scallions/green onions, chopped
Taco seasoning, if desired
Combine softened cream cheese with sour cream. Add taco seasoning if desired. In an 8X8 glass baking dish, layer 1/2 the beans on bottom. Add a layer of 1/2 the cream cheese mix. Final layer of beans. Final layer of cream cheese mix. Sprinkle cheese on top, then add veggies. Bake at 350 for 15 minutes or until bubbling. Serve with tortilla chips. Reheat as needed.
