and I’m feeling fantastic. It’s much easier to make good food choices. In fact, it’s surprisingly difficult to reach the number of recommended calories per day because I want to eat healthy, nutrient-dense foods constantly. I am grateful of the decision I made and of my boyfriend, who is very supportive of my efforts and who even tries out all my new veggie cooking.

That’s how long it’s been since I’ve last eaten meat, and I feel fantastic. I’ve picked up a good vegetarian cookbook and finished the book Skinny Bitch, which just solidified my goal to eliminate meat from my diet and to even consider a vegan diet (I’m still trying to wean myself off of dairy). I discovered the joys of shopping around Whole Foods market (which has plenty of organic and veggie options) and I think I’m well on my way!
