...once you get a few meat-less recipes you like, this goal is really easier!!
Today I ate:
Breakfast: Peanut butter and toasts, some cantaloup and apple
Lunch: Couscous and Chole and sprouts
Dinner: Fake-beef Stroganoff and pasta.
Since the beginning of the year I’ve been eating vegetarian every other day. Amazing. And tasty :)

Tried seitan
Found some seitan at my grocery store. Tried it tonight, with rice noodles and loads of coriander leaves. It was actually really good!

I’m copy-pasting this from my ‘mealplanning’ goal so sorry if anyone is reading this twice :-S
All the planning and grocery shopping completed!
Saturday Jan12: Carrot-coconut soup, oriental salmon, pasta
Sunday: Vietnamese chicken (seitan for me!), rice noodles, figs salad
Monday: Beef stroganoff for DH, Fake-beef stroganoff for me
Tuesday: Couscous, Indian Chole, potatoes (?) , pork for DH
Wednesday: Penne pasta with feta and tomatoes
Thursday: Chicken and Peppers in a Tangy Sauce (me skipping the chicken and adding more white beans)
Friday: Grandma’s macaroni
So besides the salmon the week will be meatless for me. Trying quite a few new vegetarian stuff I havent tried yet (satay and fake beef strips). Hopefully they will come out good….

Today I went to BK. Before this goal, this was one of my favorite place to go and grab a whopper (blush with shame). Today I went with the firm intention of having a vegetarian burger, and that’s what I ordered, and when I sat down I realised that my burger was a …. whopper!! So either I spaced out while ordering or the cashier got my order wrong ( I suspect they don’t often serve the veg burger at that location). Anyway. Now I have to admit I’m a very shy person (very very shy!) and because ‘overcome shyness’ isn’t on my agenda for 2008 (lol) I was stuck with a whopper because I didn’t dare to exchange it (don’t throw me stones please!).
At first I intended to eat it because I’ve been eating that food anyway for at least a decade now… and then all I could see was that burger patty clogging my arteries …..... and that kinda took away the fun…... so I tossed the patty in the bin and eat the meat-less burger (not sure that made it healthier…. at least less bad!).
So I feel better for my health and cholesterol level, and I can still say I’m semi-vegetarian since the beginning of the year, but I do feel bad that food was wasted in that way…...that all the pollution relating to raising farm animals and animal suffering was done for nothing…....... aargh I hate this feeling.
So today’s food log:
Breakfast: leftover vegan pancakes
Lunch: Beef-less whopper
Dinner: Vegetarian pizza.

If I hadn’t taken a bite to make sure the chicken I cooked for DH and the kids was spiced correctly (was trying a new recipe on them) today was meatless again, but not very tasty!
Breakfast: Cream of wheat
Lunch: Leftover spaghetti with tvp
Dinner: Tried a falafel burger and it wasn’t very good. Won’t do that recipe again. It’s the second time I try to make a bean burger and I really don’t like the texture at all. So I’m giving up on bean patties and will stick to the store brand which taste ok, and I’ll keep beans as beans!

Without really meaning to do it, today was a vegan day for me!
I ate an apple as breakfast (ok, got up really late and it was almost lunchtime by then!)
Lunch: Pasta with marinara sauce
Dinner: Tried tofu for the first time, didn’t really like it but I had no clue how to cook it. I cook it in a Madras Curry recipe (usually I use chicken but tried tofu instead).
For snak some crispers and some dried figs. Oh, and a handful of almonds too.

Today was my first day without any meat. I ate vegan pancakes with maple syrup this morning, some veggi-burgers for lunch with dark chocolate for dessert and a meat-less chili for dinner, with grilled vegetables and oranges for dessert.
But those recipes are about the only meatless ones that I’ve tried and liked, so I’ll have to try out many more before another meatless day!...
