whole wheat penne primavera, asparagus and yellow squash for lunch. Leftover vegetarian fried rice and a banana for supper. Weird how this goal finds me eating more vegetarian meals than meals with meat now.

Lunch today was spinach and cheese tortellini.
Weird, I am beginning to eat a lot more vegetarian meals. Haven’t had any meat today, and only a few scallops yesterday.
...and the most beautiful and delicious tofu and vegetable curry soup I have ever eaten with a side of steamed white rice. If I could cook vegetarian meals like that, I would never eat meat again.
in vodka sauce, broccoli, and bread last night; vegetarian vegetable soup and a slice of whole wheat bread tonight. I just found out I have alarmingly high cholesterol so I will be making an even greater effort to eat vegetarian.
Mushroom-filled tortellini with Alfredo sauce. That’s it. I ate a tonne of vegetables and drank some Spicy-Hot V8 juice during the day today, and I was too tired and lazy to make any vegetables tonight.
Salad and some strawberries for dessert.
