My father in law is growing a variety of vegetables in his garden – and he really knows how to go about it as he used to be a gardener before he retired. Last time he came to visit us, he brought a bag full of apples, another one with tomatoes – and a huge zucchino.
I had never before seen a zucchino this big. Since it grew so straight, I thought it be perfect for stuffed zucchini.
Now I’m a great fan of millet – as long as it is prepared in a hearty way, not sweet. So I decided to try a millet stuffing. Here is what I came up with:
Ingredients
- 1 cup millet
- 2-3 cups vegetable stock
- 1 big zucchino (or 2 smaller ones)
- 1 egg
- about 1 cup grated Gouda cheese
- 1 tablespoon breadcrumbs
- pepper, salt
- oil
Method
Rinse millet thoroughly, then cook it in the vegetable broth (amount depending on the size of the millet grains – check the instructions on the package, if You’re not sure) for about 15 minutes.
Cut the zucchini in halves and scrap them out, leave about 0,5 cm brim.
Chop the onion and fry it in a pan, add the zucchini “innards”.
When the millet is done, add it to the zucchini and onion, season with pepper and salt.
Let it cool somewhat, that add the egg.
Place the zucchini halves in a casserole dish (you might want to grease the dish first), fill them with the millet-mix.
Mix the grated cheese and breadcrumbs (I just grated some bread for that) and sprinkle it over the stuffed zucchini.
Put the dish in the oven – 170°C circulated air, otherwise 190° – for 20-30 minutes.
I planned to use plain yoghurt as a sauce – but we didn’t have any. So we used sourcream. Tastes just as good, but is more fattening.
Verdict
It’s so easy to do – and it’s so delicious. I’ll add some fresh herbs next time (lots of parsley, for example) – I had just forgotten about that. And I’ll make sure I’ll have yoghurt at home. The cheese-breadcrumbs-layer turns out wonderfully crunchy. This huge zucchino with the filling millet was enough for two dinners for the both of us (The little girl had some of the zucchini, but she didn’t eat a lot).
