still at it!

Just saw I last posted here 2 weeks ago. I am still doing well on the veggies and am pleased with myself. I think apart frm one very depressed day where I just ate toast, I have been managing to eat veggies daily!
Also this evening I tried my hand at some sort of Chinese stir fry (well I made it in a wok so I suppose that counts) of beans and spring onions with some sort of mystery sauce that came in a bottle and some 2-minute noodles. It came out EDIBLE! So I ate it. I’ve also made a nice thick veggie soup recently (very simple recipe and VERY YUM every time .. h ard to go wrong with this recipe).
All in all quite pleased with myself but not yet pleased enough to consider this goal down. I want the DAILY thing to be more firmly established.
Feels good though .. and recommend you set reminders cos it really does help!

plus I just picked up a really nice book called The Single Vegetarian which has loads of great healthy and above all EASY recipes. Did no cooking today as I’m down with the flu but still managed to get some veggies in by ordering palak paneer (pureed spinach with cottage cheese .. sounds a bit gross but is very yum)

I’m doing well on this one. I’m seeing that a lot of the things on my list are interconnected so the more I get ahead with one, it helps on another.
Have been buying, eating and cooking veggies and meals and feeling much better about it. If I keep up with it I can mark this as DONE. Think I should give it a month or so.

Quite slipped my mind this evening. Went out and had cream of turkey soup, roast turkey – hang on!! There were a few bits of veggies in there!! And finally plum pudding with some very bright red fruity sauce. Aaaah … I now feel like a python that may need to wait several weeks before this meal is fully digested. But what the heck. It’s Christmas Eve. Merry Christmas, whoever’s reading this!

steamed baby carrots, brussel sprouts and asparagus, sprinkled with coriander powder and something called “herb salt” .. and had that with two slices of toast with peppery cheese spread.
But it wasn’t enough so dug out some chips and salsa.
But THAT wasn’t enough so counted out 10 Smarties and munched on them as slowly as I could LOL
However, the point being to eat more veggies, I haven’t screwed up yet. Day One a success. (I also had spinach and potatoes at lunchtime).

Ok here goes

Made a start on this. Bought some asparagus and brussels sprouts. Decided I should go buy fresh veggies from the shop down the road every day (this will also help me get out of the house and walking .. another goal .. might as well kill several with one stone). But it’s COLD and I don’t like salad in winter and how many boiled/steamed veggies can one eat before the craving for pizza and burgers and big sizzling bakes and, and, and … !!!
