The Journey

First, I’m getting hands-on experience working in a professional kitchen so that I am comfortable in the environment. I’ve been working as a professional cook since 2000, and have always loved experiementing with flavors and presentation techniques. I have my AA in Culinary and have worked in catering, cake baking/decorating, as well as high-volume production kitchens. I’m now working on my BA so that I can have a business-minded approach to my dreamy nature. I envision rich, dark wooden floor with earth-tone furnishings modernized with metal and glass touches. The heavenly scent of fresh coffee brewing, both regular and specialty flavors, pastries baking, and fresh vegetables grilling waft through the air. The sound of people chatting over a cup of house blend and warm-from-the-oven muffins, getting-to-know-you banter exchanged between college students over their favorite, worn books, and the lovely sound of the cash register chiming against a background of ambient music. The tastes will be rich and bold, classic and new. I’ll be standing in my open kitchen watching everything unfold, while I make delicious chocolates for my candy counter, smiling and satisfied because even though it’s a small business, it’s mine, and it’s thriving.
