I wish I had started earlier than 7pm, but it was necessary in order to accommodate a lazy afternoon watching Legends of the fall and then (finally) writing my lesson plans. it wasn’t ready for consumption until nearly 9:30, but that was okay as this makes for a relatively light meal. I skipped the bell pepper and instead added kale, broccoli and red onions to mine. it’s been so long, I forgot how much I love the versatility of quiche! we had some Follow your Heart cheddar in the fridge so I added that as well, for an extra cheesy-kick that both j and I liked. this is a winner in my book!

last week I made not one, but two “recipes” to get us through the week. The main one was Corn Chowder. care of VwaV, which is wonderfully spicy and jalapeno-y. less than one serving remains in the fridge. secondly, I attempted to break my addiction to spicy tofu sammiches from the Palm Tree by making my own tempeh “chicken” salad to take for lunch. I packed it full of good stuff like kale, carrots, walnuts and even some spicy pickles. j was a fan but, while I thought it was good, it came nowhere near the goodness that is the “sammich” and so I still visited the PT twice this week. this is one I’ll keep working on (no recipe, just winged it) til I come up with something that satisfying my sammich craving.

j and I are committing to take-out no more than once a week. To make this possible, we really need to get back into the groove of cooking (at least) one big recipe a week so that when we open the fridge, we aren’t met with desolation and the need to order in.
