I went to the Ice Hotel in Lapland (north of the arctic circle) in March and in the small village we stayed in the supermarket had a whole section of allergy friendly foods.
The supermarket wasn’t big but there was a whole shelf in the chill cabinet of rice, oat and soya milks and desserts. There was a choice of rice cakes and gluten- and lactose-free crispbreads and I think bread too.
I was very surprised but really pleased.

And I nearly had a problem.
I am gluten intolerant not coeliac.
I found some lovely looking rice cakes and some chocolate covered ones too in a supermarket. Then next to these I found other rice cakes that looked like they had the word rice on them and realised that (after looking more carefully and doing my pattern-recognition language stuff from other labels etc) that the ones I saw first where puffed wheat cakes! eek
