Made a pasta with lemon-chevre sauce and aparagus. I found that on the SmittenKitchen blog, and she in turn adapted it from Bon Apetit. It was really easy to make, and it was even better the next day.
Also made vegetarian sushi this weekend, which was pretty easy to do and surprisingly good for homemade. The next day, I took the leftover sushi rice and warmed it slightly, then added the cold vegetables for a quick rice-salad bowl. Yum.
Next up is pan-fried tofu with a roasted red-pepper coulis. If I’m not too tired after work, I’ll make that tonight.

I’m not counting this as one of my recipes, because it’s not homemade, but last night I made pasta with tomato sauce and put a Morningstar chicken pattie on top and it was GOOD. My meat eating boyfriend even ate two pieces of “chicken” and he loved it.
I ate no meat yesterday, and the only dairy I had was a little plain yogurt on my cereal.

I’ve been perusing vegan blogs and various websites trying to find recipes that don’t just look like side dishes, but also don’t rely on processed meat substitutes. I’d really like to set myself up for success, so I’m going to work on adding in delicious veggie meals before I subtract the meat and dairy completely.
