I got a lot of wild greens, some potatoes, baby corn, carrots, butter beans, black eyed peas, green onion, bok choy, and mushrooms.

I started eating a salad every time I go to the cafeteria (and before everything else), and not putting too much dressing on it. If I do use dressing, it’s olive oil, red wine vinegar and black pepper. I also go light on the cheese. I actually prefer dark green leafy vegetables compared to light green. Which is good, they generally have more vitamins and minerals. I also love olives and mushrooms and cauliflower(raw or streamed). Lightly steamed dark green broccoli is good too.
I’m starting to try to drink less juice and eat more real fruit (never been a fruit nut to begin with). I find I really like blueberries, and ripe apples that have been cooled in the fridge.
This spinach shotage is relaly hitting me hard. I hate canned.
The fact the salad at the college tastes like dirt doesn’t help.
I probably need to eat more salad.
I’m taking some more strenous physical activites and need the boost. Now if only I can resist the urge to use too much salad dressing and cheese to top my salad’s off. Too bad dorm salad is wilty and stuff :(
