It was easy enough because it cooked in the crock pot. Crock pot cooking I can do, just throw it all in in the morning and don’t worry about it til its time to eat. That’s my kind of cooking. The downfall to crock potting is that it is a pain to clean it.
Anyway, it was pretty good. I was surprised because it looked kind of boring and plain, but it was good. Hudson didn’t eat any of this dinner either because he fell asleep very early tonight. But he did eat leftovers of yesterdays dinner earlier today. So I guess yesterday didn’t go totally unappreciated.
Shocking, I know.
I made Spanish Style Pasta with Chicken and Peppers. It is one of my fave dishes that my mom used to make. It turned out well. Tasted and looked how it should have. It did take more than double the time the recipe claims it should take, but whatev.
My favorite part… after spending an hour and a half cooking dinner for Hudson and I. Hudson wouldn’t eat one single bite, not one! Grr! That little booger!
It was SO much better than Sunday’s meal. I made Crispy Chicken with Red Pepper/Lemon Sauce and Oven Fries. It was rather yummy if I do say so myself. Again, it took me rather long to cook, about twice the time the recipe says it should, but whatever! Yay! One decent meal down, a lifetime more to go.

It took me 3 hours to make, more because of my slowness not because of the recipes. And then…. it wasn’t that good. Big disappointment! :( But I guess practice and continuing to try is the only way that I will get better. And I am trying!
in the attempt to gain some skills. I have tried a few recipes, some turned out better than others. Tonight I am going to make pecan crusted snapper. I’m not a fish person so this should be interesting. :)
