I made my first bacon and egg pie, it’s currently cooking in the oven and smells great. Couldn’t be easier, and a great way to use almost-dated eggs in great quantities. Basically I lined a pie dish with pastry and blind baked it (baking paper with dried beans or rice on top to weigh it down) for ten minutes. Then I beat about twenty eggs with half a cup of cream, chopped some bacon and put this in the microwave to drain out some of the fat, then mixed the bacon with the eggs. Poured this into the pastry (after removing the rice/beans!) put a round of pastry on top (this was tricky cos the eggs leaked over a little) and in the oven… wha la!
