I called the American Personal and Private Chefs Association as part of my job today, and had a terrific conversation with the director. We chatted for about half an hour.
When she heard I’m an entry-level foodie, she enthused about the classes that are available in the L.A. area. She suggested the following (saying that these will give me the basis for lots of great improvisation):
Knife Skills
Soups and Sauces
Meats
I started looking for classes today. Found some at Sur le Table at The Grove. Looks like I have to wait till the first Friday of March, but that’s cool!
