Today I made a wonderful pasta dish loaded with kale. It was actually very tasty. I’ve been enjoying experimenting with new veggies lately.

I have been falling behind on this one lately as I just haven’t eaten that much. But, today I piled 2 types of mushrooms, onions, garlic and tomato on a sandwich. It was good and racked in the veggie count.
I have been documenting everything I eat on Sparkpeople.com. It has a great feature where you can just arrow up or down on how many fruits and veggies you eat and water you drink. It is a great tool to keep me aware of what I am eating.
For the first day, I ate 5 a day yesterday. It seemed like a lot of fruits and veggies, but if I were to continue to focus on eating 5 a day of these I wonder if I would eat less other things?
Today I made split pea soup. Yummy way to squeeze in some veggies. I also drank some fruit juice. I’m not sure if I came up with 5 servings though.
