I thought I would share my dietician approved recipes with the rest of the team. When I was at the height of my immobility I was referred to a lovely dietician who had to discharge me as she admitted that there was little she could do for me in a good way. her advice to me was to watch my portion sizes, not eat too much dried fruit, and exercise as and when I can.
She also stole quite a few of my recipes.
BANANA BREAD (10 portions at least)
Sieve 250g plain wholemeal flour, 2 tsp baking powder and 1tsp mixed spice into a bowl. Rub in 75g sunflower margarine until it resembles breadcrumbs. Mix in 50 g sugar, 2 tbsp honey, 2 eggs (medium or large)and 2 mashed bananas (approximately 200g)and mix until smooth. Level mixture in a greased and lined 7” cake tin or a 2lb loaf tin and bake at 200 degrees centigrade for 1 hour or until the top is springy. This cake is best left overnight so the top becomes sticky.
An alternative to the sugar and honey is to use rice syrup as this contains maltose and other complex carbohydrates. Rice syrup is a recommended alternative sweetener for diabetics as well as dieters. Or so I was told. I get my rice syrup from a local health food shop.
