So, I just made my second batch of granola.
This time I was out of almonds and just used pine nuts and pistachios.
Plus I ditched the honey and used more maple syrup and rose sugar instead of vanilla extract.
And, this time, I added the nuts after half the cooking time.
It looks quite fine and smells divine!
Breakfast is settled for the next two weeks :D

On a whim, I bought instant oatmeal.
Blargh.
I’m forcing myself to finish it now so that I’ll learn not to by things I was warned about :-)
I’m hoping I’m back to my nice oatmeal soon.
As my doctor recommended hot breakfasts (and I don’t think she meant toast), I’ll focus on breakfast for now.
First step: oatmeal :D

Husband has the summer flu so I’m cooking pasta again.
As it’s a 36C outside, something light and fast: Pasta with pesto genovese (and extra parmigiano reggiano for me).
Surprisingly it was really good and is all gone now :D

Today, I forgot to defrost something for dinner and so I had to make pasta again ;-)
I made a tuna sauce with Italian tuna packed in olive oil, a nice canned tomatoe sauce with basil and added garlic, green olives and some anchovies. Very good and very very easy…
And this time I made enough to get leftovers for Wednesday.

Today, I tried my hand on a chili, Austrian style :-)
Made with ground meat, tomatoe sauce, kidney beans, corn and red peppers – served with fresh bread.
It was very good and I only got one little portion to freeze for next week :-)

I feel a little tired today, so I made easy things today:
For lunch, we had “Leberkäse”, a local speciality sausage (containing neither liver nor cheese despite its name) that’s served in big slices (like a ham steak) fried up. With fried eggs and a slice of swiss on top and fresh bread rolls, served with mustard and ketchup. We used a variety of the sausage containing no dubious meats :-)
Desert was Panna Cotta.
And for dinner, the left over breat rolls with bruschetta topping (tomatoe with onion and garlic, bought ready made) and Parma ham :-)
Quite nice for an easy day!

Today, I tried my hand on doing something with leftovers.
I had some pasta left over and I made a casserole with mozzarella and Swiss cheese from it.
Very easy, again, and quite good.
I might be able to do this!

So, today is the first day I made dinner after a long day at work.
I made small meat loaf style burgers, mashed potatoes and gravy.
Easy and comfort food for my poor husband who has a tonsillitis in addition to his surgery.

Today, I made pasta with my kind of bolognese – ground meat, white onions, garlic, italian herbs (basil, oregano, thyme, rosemary…), canned italian tomatoes and a ready-made spice mixture pack.
Add spaghettinis and shredded mozzarella and you have got lunch.
My kitchen looks like something else, but it was quite good :-)
