They were ok, but missing something. I need to get the filling right and then they will rock. Something was off with the seasoning.
This is sort of an expiriment I’m trying out tonight LOL. I found a recipe for a veggie casserole which basically just mixes canned veggies with cream of brocoli soup and bread crumbs on top. I’m going to add a twist to it though and turn it in to a topping of sorts for my leftover pasta.
I made homemade meat sauce for my pasta, it was super yummy! I think next time I will put more veggies in with the meat though.
Roasted potatoes with melted cheddar cheese. They were good, but I think they needed more seasoning than just the EVOO and salt & pepper the recipe called for.
I’m making brocoli and cheese casserole. AKA, making mac & cheese, adding brocoli and reheating it with bread crumbs on top!
I am really enjoying this goal because it’s gotten me to enjoy cooking again and I’m finding that I’m actually making several new things each week instead of just one.
I made these on Sunday, but instead of shaping them in to cookies I totally avoided the messy hands and spread them in a pan like rice krispy treats! They are super good though.
HOLLY COOKIES
1 cube butter
30 lg. marshmallows
3 c. cornflakes
Red hots
1/2 tsp. vanilla
Green food coloring
Melt butter and marshmallows in saucepan over medium heat. Add vanilla and good coloring. Mix well. Add cornflakes. Spoon onto waxed paper as you would drop cookies. Dot each with 3 or 4 red hots. Work quickly when spooning onto waxed paper as mixture hardens quickly. 2-3 dozen.
I followed the recipe exactly, but it just didn’t have much flavor. I think if I try to make it again I’ll have to find a different recipe. At least I’m trying new things though!
This is today’s new recipe taken from Rachael Ray’s 30 Minute Meals:
1 store bought pizza dough – or pick one up from your favorite pizzeria
Extra- virgin olive oil, for drizzling
2 cups whole or part skim ricotta
2 cloves garlic, finely chopped
Handful flat-leaf parsley, finely chopped
2 cups shredded mozzarella or provolone, 1 pouch
10 fresh basil leaves, 1/2 cup, shredded
Preheat a pizza stone if you use one along with the oven to 425 degrees F.
Stretch dough to form a pie and transfer to stone or pizza baking tray. Pierce the dough with the tines of a fork in several places. Drizzle extra-virgin olive oil around the crust. Mix the ricotta cheese with garlic and parsley and season it with salt and black pepper. Spread the ricotta across the dough. Top the pizza with mozzarella or provolone. Bake until crispy, 20 minutes. Top the white pizza pie with the shredded basil leaves, cut and serve.
I made an English Muffin pizza LOL. I know it’s almost not cooking, but someone suggested it to me on another website and it sounded yummy and easy. It was good, but not really enough for dinner so I think I’ll just save this one for an occasional snack.
