We were all sick as dogs for the past several days and eating was not big on the list. But today we all sat down for some lightly buttered noodles, a little yogurt, and popcicles. Hey, it was something!



Step 1. Surrender TV Time 3 years ago

I was able to make a very tasty chicken Jambalaya after work last night, but Hazel missed it because I didn’t get it done until after her bedtime. So she had Yogurt and cheese and toast and peaches alone, and the grownups ate later.

After dinner Kimba and I cleaned the kitchen together (BONUS!) and I got some pork loin ready for dinner today (into the maranade). I biked home on my lunch hour and got some greenbeans ready for dinner, and put them in the fridge. I told kimba how to do the loin, and asked him to pop it in the oven at 5:30. When I get home, if all goes according to plan, we should be able to sit down to dinner by 6:30.

Tomorrow I don’t work, so it should be easier.

I am planning to simplify family dinners by systematizing them:
Monday—Bean dish (Black Beans and Rice)
Tuesday—Egg dish (Eggs Jeannette)
Wednesday—Ground beef dish (Meatloaf)
Thursday—Vegetable dish (colcannon)
Friday—Chicken dish (Jambalaya)
Saturday—Pork Dish (marinated pork tenderoin)
Sunday—Cheese dish (Welsh rarebit)

Our budget is so tight, and all of these recipes are cheap and can be done in stages. I figure if I do variations on each one, and keep switching the sides, it won’t get too tedious. Time will tell.
