I stuffed this up but it was very successful. Very very rich though, so if you make it, only slice thinly! Very moist. I made ganache for the icing and we topped with butterflies :-)

The picture looks NOTHING like the result but it was extremely tasty and easy. We all loved it! Tara even ate it which is a mammoth achievement initself. I didn’t realise that lamb steaks had a good result braised for over an hour..I imagined it to be tough, but the meat was perfect.
Something that I have never made before. Weirdly enough I just have always made ‘meat based’ Mexican dishes. So inspired by a friend who has a food blog and she made them the other day, I followed suit and roasted up some sweet potato, pumpkin, zucchini and spanish onion in extra virgin olive oil and seasoned well with salt and pepper. Once cooked added some roasted capsicum slices and slices of avocado. Popped them into a tortilla topped with cheese, wrapped up and pan fried then topped with sour cream. Ohhhh lordy. Such vegetable goodness. Sooo sooo yummy. I am a sucker for good mexican and this is the best I’ve had at home in a long time. I know this is a common dish but one I’ve overlooked until now.

Both absolutely delish! Just a touch of bite and the meatballs were really moist and not dry at all (as can be the case for me).
a Shepard’s pie with leftover lamb roast (which I had done coated in sundried tomato pesto and garlic). It was delish!! :-) Could have done with more meat though.
Tonight I made a simple Tuna and Macaroni bake.. nothing exciting, but a new recipe nonetheless and it was quite successful. I enjoyed it. Another recipe from taste.com.au!

I didn’t add the cornflour to thicken. It was perfect. Easy and really really delicious!!
