I’m doing pretty well with this goal. I had frozen peaches and tart cherries for breakfast this morning. Ymmmm! Lately I’ve been choosing better alternatives. I drink more juice now and yesterday’s muffins were oat bran. I even have tofu in my fridge, though I’m not very creative with it yet. I purchased some nice little storage containers so that when I start back to work in a couple of weeks it will be easier to take healthy foods for my lunch (a real problem last season).
I suppose my vegetable goal has broadened to include my whole diet, which is a good thing.

I’ve decided to expand this to include fruits too. I intend to eat 5-9 servings of fruits and vegetables every day. Today I made it!
To go along with eating more vegetables, I want to grow most of my own. Fresh tastes better. And I want to purchase them from farmer’s markets when I can.
