Tonight I started off planning to make something I’d seen on Rachael Ray (bread gnocchi) and decided to make it into a casserole type of thing with zucchini. It was great.
- frozen leftover bread, in chunks, sautéed in olive oil and garlic
- pasta sauce (arrabiata)
- zucchini and garlic scapes, sautéed
- 2 oz cheese (1.5 oz muenster, .5 oz romano)
Layer bread, sauce, cheese, zucchini, sauce, cheese.
Bake until cheese is melted and sauce is bubbly.
Delicious.
Pasta w/ broccoli, cauliflower, cannelini beans, a little oil, a lot of garlic and ricotta salata. I think it would have been better with more oil to make a sauce, or to puree the beans and add a little soymilk or cream. It was very flavorful and filling though.
I’ve been making some vegetarian things, but it’s mainly the same old things over and over.
I haven’t tried any new vegetarian/vegan recipes in the past month. But I’ve been making the Quorn/black bean/hominy/corn/salsa super-easy thing a lot.
I think the next thing I’m going to try is mole chili, because one of my lovers was telling me his partner added unsweetened chocolate to chili and it was awesome. I bet that would be really good in the raisin chili I make.
