dr. weil's kale salad

turned out ok. i made a few modifications:

added sesame garlic dressing, no bread crumbs

i got curly kale which is much more tough than the recommended tuscan [dinosaur] kale. i did massage the kale to tenderize it. also beat it with a spatula and added salt to break it down more.

pretty chomparific.

banana, berry & buttermilk popsicles

courtesy of martha stewart. they are still freezing, so i haven’t tried them yet.

today

i learned to make chicken pie, raspberry pie & chicken dumplings. they were yum. will need to try again with gluten-free ingredients.

tuna salad in lettuce

tuna
mayo
mustard
capers
lettuce leaf

mix the 4 ingredients together and stuff in a romaine lettuce leaf. voila!

gluten free pasta salad

pasta shells
spinach
onion
feta cheese
basil
olive oil
balsamic vinegar

yum.

but doesn’t keep very well. must eat same day [or possibly the next day].

Banana Ice Cream

This isn’t much of a recipe, but it was new to me. I just cut up and froze a banana for 1-2 hours. Then, put it in a food processor until it reached an ice cream-like consistency. Yum :)

tofu with snap peas and scallions

http://sparrowsandspatulas.blogspot.com/2011/04/marthas-tofu-with-snap-peas-and.html

made this today. very flavorful. i’m not super into tofu, so the large chunk of it was a bit overwhelming. i would make this again.
