I can but I don’t. My diet is pretty bad at times – candy, chips, snack foods and a few veggies. I need to eat breakfast every day for a week and eat a small lunch and dinner. This shouldn’t be a hard goal to achieve but it does take some planning.
Tonight I will have mac and cheese and some veggies. It’s a start. I should spend more money on good food and less money on junk food.

Kind of cheating since I didn’t eat any meat today but I’ll start today and see how I do. Hmm, but I need to decide if I am doing this to help the planet, be healthy or not eat meat as they are different goals.

I have no problem eating a meal (or two) of veggies, as I like veggies. What I didn’t realize is how much I also enjoy eating meat. While I don’t cook meat often, I do order it when I eat out – especially fast food. So this goal proved to be harder then I thought. I’ll have to plan out a week’s worth of menus and then try this again.

I ate some meat on Friday so I’ll have to start over again after I go shopping. I was running out of food that I could eat. I need to go shopping so that I’m not eating odds and ends but actually eating good food.

I found that I ate more than usual. I don’t know if this is due to the fact that veggies are not as filling, or if I was just hungry, but I was surprised how much I ate.
Good thing that chocolate is alright to eat.

I have some leftovers that I should eat first. There is no point in wasting what is already in the fridge. I like vegetables so I am not worried about not enjoying the food but I also really like meat – pork, chicken and fish. For me the challenge will be to stay away from something I like eating (meat) and eat more of things I like in a different way.
I was vegetarian by default for a few months several years ago when I couldn’t eat any fat. That took care of meat, fried foods and even cheese. I certainly lost a lot of weight without really trying.
