week 3

Week 2 of this goal didn’t go well but week three included:

Sunday: Pasta bake
Tuesday: Chicken stir fry
Wednesday: Zucchini slice
Thursday: Baked salmon
Friday: (I baked a cake but I suppose that doesn’t count!)
Sunday: Risotto

But to be honest, I think this goal is a little bit un-achievable, mostly because I cook leftovers. We often eat a homemade meal 2 nights in a row but I’ve actually only cooked once. Maybe I’ll change this goal to ‘4 meals’ a week…



1st week

of this challenge and I managed 4 different ones:
-Bolognese
-pad thai
-eggplant parmagiana frittata
-sausages with vegies
(On the other nights we had shop bought pizza with garlic bread, shop bought sushi and canned soup)

Wow, 5 is actually quite hard! Especially if you make plenty and have leftovers for the next day.
I’ll keep going for a while and think about whether this goal is achievable.
