It's Been A While...

...But I’m still here. Cooking has slowed down with all the traveling I’ve been doing, not to mention, Hubs and I have been juicing for breakfast and dinner, so my lunch meals are pretty boring things I’ve already posted. Not to worry! The holidays are approaching and I’m sure I’ll have plenty of concoctions to share. :)

Truffles

Ingredients:

Vegan Cream Cheese
Vegan Chocolate Chips
Confectioners Sugar
Vanilla Extract

Coatings—
Candy Sprinkles
Walnuts (or any chopped nut)
Coconut
Confectioner’s Sugar
Cocoa Powder (we didn’t like this one)



Italian White Bean Crostini

One word: amazing!

Ingredients:

olive oil
garlic
onion
salt
fresh basil
white beans
artichoke (optional) [I omitted this item.]
Roasted red pepper for garnish (optional) [I used sun-dried tomatoes.]

Crostini:

1 baguette
olive oil
dried basil
garlic powder
salt



Stuffed Portobellos

Hubby and I cooked dinner together tonight and these mushrooms were a reflection of it. Mmmmm…

Ingredients:
Portobellos

Stuffing:
Onions
Garlic
Zucchini
Quinoa
Button Mushrooms

Dressing:
EVOO
Balsamic Vinegar
Garlic
Dijon Mustard



The Best Vegan Stroganoff

This. Dish. Is. Amaaaazing.

I found the recipe on this blog. Wow, does she have some great taste! Of all the dishes I post, this is a must people!

Ingredients:
wheat, rotini pasta
vegan butter
yellow onion
paprika
fresh kale
veggie broth (or water)
vegan sour cream
dijon mustard
garlic
nutritional yeast (I used soy parm, instead)
thyme

*If you look at the original recipe, you’ll notice that I omitted/changed a couple of things.



Stuffed Peppers

My sister and I go crazy over these! We’ve made them twice in a week. I got the recipe from one of my favorite Vegan cookbooks: The Vegan Table.

Ingredients:
Bell Peppers
Brown Rice
Fire Roasted Diced Tomatoes
Raisins
Almonds
Garlic
Onions
Fresh Parsley/Basil
Olive Oil



Sun-dried Tomatoes and Chickpea Rotini

So, I found this recipe on the back of the pasta box. Haha. But turns out, it was really good!

Ingredients:
Whole Wheat Rotini
Garlic
Olive Oil
Sun-dried Tomatoes
Garbanzo Beans
Fresh Basil (that I grew!)
Red Pepper Flakes



Honey Glazed Carrots and Mushrooms

Now honey is an argumentative topic in the vegan world, but it is not actually part of an animal itself, so I still consume it despite the negativity others might suggest.

That being said, this recipe is wonderful (recommended to me by my dear friend and fellow veggie Jules.)

Ingredients:
Baby Carrots
Mushrooms
Asparagus Tips
Parsley
Chives (that I grew!!)
Brown Rice
Vegan Butter
Honey
Nutmeg/Cinnamon
Brown Sugar



Curried Eggplant and Chickpeas over Rotini Pasta

I really should have been patient and cooked brown rice to serve with this dish instead of pasta, but I was hungry and ready to throw something together quickly. It turned out good for a spontaneous concoction, but next time I’ll definitely be certain to have rice prepared.

Ingredients:
Eggplant
Chickpeas
Red Bell Pepper
Onions
Olive Oil
Whole Wheat Rotini Pasta
Spices: Paprika, Cumin, Tumeric, Cayenne, Parsley… (I think that’s it?? I just add a bunch of stuff!)



Garbanzo Beans

Or more commonly known as “chickpeas” might honestly be my favorite food (or one of them). I mean lately, that is all I have wanted. I’m currently eating a bowl and I just had to document the deliciousness! :)

No, I will not be posting a photo tonight. Who wants to look at a boring bowl of chickpeas!? Haha.
