We made them for breakfast again. It’s so funny to be having a cheese burger at 7am!

Delicious burgers made from seeds & grains!
A few months ago these burgers were on sale at the grocery store.
We bought many boxes of them because they were only $2.50 or so.
I love them because they are totally soy free. They are made up of very simple natural ingredients.
‘Original’ Ingredients:
Ground raw sun-flower seeds
Brown rice
Carrots
Herbs
Sea Salt
‘Breakfast’ ingredients:
Organic sunflower seeds
organic brown rice
organic adzuki beans
organic hemp seeds
organic onion
organic bell pepper
organic herbs
organic paprika
organic black pepper
sea salt
Tonight we had the breakfast patty (they all taste about the same to me except for the falafel patty). I put it on the stove for 7 minutes on each side (low).
I melted a little bit of cheese on top.
When it was done cooking I served it with a raw onion slice, mayo, ketchup and mustard and some arugula. It was so delicious!!!
We have been eating these burgers for breakfast and dinner about every other day for at least a month!! I can’t tell the difference from meat burgers except for it’s much less messy to make and much cheaper. M loves them too and he’s a major meat lover.

I just made the most delicious breakfast burrito.
On the cast iron griddle I fried up some green onions. I chopped up the white and the green part for this.
I added chopped up spinach and a little bit of apple cider vinegar (just because I like it).
After a minute or so I added two eggs, scrambled a bit with a little water and salt. I put this on the griddle and it cooked very quickly.
I heated up (on the griddle) the tortilla and added the spinach onions and eggs to the tortilla with some really good salsa!! Really delicious!
I was shopping with a friend of mine the other day and he saw me buying mayonaise. He told me that it was really easy to just make my own. Today I tried making my own. It was really really easy.
I basically looked at my jar of mayo in the fridge and used those ingredients.
Olive oil
Lemon
Apple Cider Vinegar
Honey
Water
Eggs
Salt
Paprika for color
I just blended all of this for a few minutes in the blender. I couldn’t resist adding 4 cloves of garlic so technically I think it’s now an aioli.
I used some of my mayo to mix with some tuna. It was delicious!
The rest is in a jar in the fridge waiting for the next meal.
Cool!
Simple video from the author of Wild Fermentation. He makes sauerkraut (using cabbage, carrots, garlic etc).
A few days ago I bought a package of Daiya (day-ya)cheese. I have been hearing so much about it lately.
Daiya comes shredded, cheddar or mozzarella style. It is completely dairy free. The really exciting thing about Daiya is that it melts like regular cheese.
So far I have made two sandwiches with the daiya. It melted as fast as regular cheese and tasted almost the same.
Today I made an open faced sandwich on the griddle. I put slices of red onion, a bunch of daiya mozzarella and capers on top. Delicious!!!

Well, almost.
Tonight I had to spend 5 minutes looking in the fridge and cabinets to come up with something to make for dinner. We don’t have the right kind of food in the house to prepare a real meal.
I got creative and decided to finally cook the mung beans.
I cooked mung beans for dinner. When they were done cooking I added chopped onion (french and yellow), butter, salt, turmeric, and cumin.
I stirred it a bit.
It looked a little like this
I also made grilled vegetables. I cut up onions, potatoes, and garlic and covered them with a little oil and salt. I grilled them for about 45 minutes.
We had a bowl of mung beans and ate the grilled vegetables (optional ketsup/mayo for dipping). Iced green tea to drink.
Both of us enjoyed our dinner and we saved a little bit by not going out:)
We have been drinking fresh squeezed orange juice every morning since we got the electric juicer.
This is pretty much what it looks like at our house.
;)
Cole Slaw with Chia
Tonight I made the most delicious thing ever!
Grated cabbage
Oil (I used Rice bran oil)
Apple cider vinegar (Braggs)
salt (I used Celtic sea salt)
add sunflower seeds
add chia seeds
mix
The seeds add a great crunch and flavor and the chia looks so cool mixed in with my coleslaw. Very nutritious as well.
I hope next time I can make a bunch and save it to eat the next day.
I love cabbage so much I usually just want to eat it right away though.
milky color with a green tinge
I have a big bag of pumpkin seeds at home. They are raw and I usually dry roast them on the griddle and add a bit of oil and salt (delicious!). The other day it occurred to me that there might be such a thing as pumpkin seed milk. I looked online and saw a recipe. It looked so simple!!!
Tonight, while waiting for my rice to cook, I decided to make some milk. YUM YUM! I filled the vitamix with lots of water, 3/4 full. I added many handfuls of raw pumpkin seeds (very scientific). I kept adding until the color looked ‘milky’. I added some Rapunzel sugar (with all of the minerals still intact). I added some celtic sea salt and some vanilla.
After blending the mix for a few minutes I strained it with my paint strainer bag (yes, it’s the same as a nut milk bag yet it’s cheap as hell at the hardware store). After straining it I ran and gave a cup to my honey and he is drinking it now. I had a cup and it’s just another yummy nut/seed milk. I’m so happy to have one more to choose from. What can’t you make into a milk?

P.S. I heated it up and it didn’t separate. I added a bit more sugar, vanilla and cinnamon and it was delicious!
Perfect for Saint Patrick’s Day!!
