Unless C’s eating yucky boca or such, if I’ve made something vegetarian for her, I choose to eat it as well. And I’ve added some more vegetarian regulars to our meal routines :)

totally fell off the wagon with this one! my mom cooks and she cooks well and she cooks a LOT of meat. I think I had meat at 2-3 meals a day all vacation. {gulp}
But we’re home now.
Made pizza on the grill tonight. There were two (yummy) veggie versions and one with pepperoni. I avoided the pepperoni ;)
Yesterday:
breakfast—waffle
lunch—pizza with spinach and feta
supper—grilled cheese and tomato sandwich;fries
Today:
breakfast—waffle
lunch—leftover veggie gumbo
wow! without even trying.
We’re going camping this weekend, so there will be meat consumed!
Make Southwestern Gumbo last night and opted out of the grilled chicken and in favor of the pinto beans.

My 12 YO daughter has been a vegetarian for over 9 months now, so I guess I can accept that it’s not just a “phase” for her ;)
I have always loved veggies and fruit, but have also somewhat fallen into the habit of choosing the meat for supper, and planning the meal around that.
I really have no desire to go strictly vegetarian, but I would like to be able to cook more meals w/o meat, or meals using LESS meat (like a ham bone for flavoring, or chicken stock, but not loaded up w/ meat)
