Homemade Salsa 15 months ago

We made some salsa with some veggies that my cousin brought me. It’s really good! We’ve decided to try a few more recipes for salsa since this one was so easy, and it’s really fun having fresh salsa in the house.

Without even trying, we had a vegetarian day. Egg sandwiches for breakfast, cheese quesadillas with raspberry salsa for lunch (and ice cream for dessert), French toast with brown sugar cinnamon sauce for dinner. It was a good food day!

I had an egg and cheese sandwich for breakfast and leftover spaghetti for lunch.

Oatmeal for breakfast, pb & blueberry jam for lunch, spaghetti, garlic bread, and half of a red bell pepper for dinner.

And two glasses of Bailey’s, but hey, that counts too!



Veggie pizza 20 months ago

Tried the vegetarian pizza from Papa Murphy’s last night. It’s got tomatoes, onions, mushrooms, zucchini, artichoke hearts, and spinach on it. Yum! Next time I make a pizza it’s going to look something like this. Oddly, though, the question is whether I can make one for $13 or less. Once the farmers’ market opens up, I bet the answer will be yes. In the winter, I’m not so sure. But either way, pizza is one of those foods where it’s pretty easy to pile on the veggies.

Friday was an all-vegetarian day. We had Irish oatmeal for breakfast, cheese quesadillas with salsa for lunch, and mushroom stroganoff (which I cooked!) for dinner. All three were delicious meals.



Lent 22 months ago

For Lent this year, I’ve decided to eat only vegetarian and pescetarian meals. So far, it’s not been hard at all.



Fish and Squash 2 years ago

Tonight we’re having almond-crusted flounder, which is really good (we’ve had it before), but I’m mostly excited about the acorn squash we got from the farmers’ market. I really hope he likes it. I’m trying so hard to get some more and different vegetables into our meals, but sometimes I feel like he’s fighting against me just as hard. I’m not sure he really realizes it all the time, though I have mentioned my frustration to him.

Anyway, this is going to be a delicious “Catholic Friday” meal.
