i’ve definately increased my vegetable intake.
i put peas on nearly everything.
i love spinach, tomatos, sweet potatos, soybeans, mushrooms, green beans, bell peppers, chickpeas, carrots, sprouts, BROCCOLI… i have veggies every chance i get.
i’ll sprinkle them on pasta or make a stir fry or have veggie burgers. it’s a lot easier when my college dining hall has an amazing salad bar – i don’t have to prepare veggies, i just add them to my meal! :)
but yea, i’m definately eating more vegetables, and it makes me feel good about myself – because vegetables are so healthy.
i’m going to keep it up, and try to add even more vegetables to my diet.
