My latest client has an apple tree, and she gave me a huge bag of apples. This recipe is so simple, and sooooooo delicious!

put some chopped apples in a dish. sprinkle with sugar and spice. muscovado sugar is nice if you have it.
mix 8oz flour, 2oz sugar and a bit of spice. rub in 2 oz of butter. the mixture should now look like breadcrumbs. pour over the apples.
bake at 180C.

There’s nothing like the smell of banana cake to make a house feel like home.
I’ve just made a banana cake and I’m trying to put off eating a fourth slice for as long as possible : might manage two or three minutes if i’m lucky.
I’m very lucky, my mum and aunt first taught me to bake a cake when I was about three :) There are so many things that only take ten minutes from “mmmm, i feel like making a cake” to putting it in the oven. I really must bake more often.
