I made a slow cooked chicken in the style of duck confit. So instead of using the oily duck, I substitute chicken for it. For a side dish, I made white beens – Corona Beans to be exact.
One has to be very patient when cooking beans. I’m going to expand into beans from now on… adding it to my all time favorite – Rice.
Thin rice crackers and cheese is better than the usual bread and cheese. I had Banon Chalais on rice crackers last night washed down with a 2005 Beaujolais. Fantastic! Good way to celebrate the end of a days work.
I will minimize my intake of bread and products with wheat.
Had coffee as soon as I got out of bed ~ nothing is better than newly ground deep roasted coffee beans from my hand-crank grinder, set the coffee in the espresso/percolator and wait for the goodness to boil up ready to drink.
Second phase ~ a mix of apples, blackberries and blueberries. Eaten a handful each time in an explosion of tasty fruit flavor.
Third phase ~ ah… relaxing Yogi tea of Tahitian Vanilla Hazelnut. Water of course.
Now this is a light rejuvenating meal for the morning that would last me till the afternoon.
I want to change my eating habits. Comfort food for me is not comfort food anymore. Eat small portions and substantially nutritious meals, yet satisfying. This is not a diet. It’s going to be a big change. While I am at it, I want to know how it affects my body.
