I love Trader Joes!! I picked up a frozen bag of sliced assorted peppers (red, orange, yellow, green) with onions, some pre-sliced thin beef, and added some spices….stir-fried it up and served it on wraps with cheese and sour cream! Yum! This one is a keeper!

Made a most delicious pot of homemade chili with corn bread on the side a few weekends ago. Must break out the recipe and do it again!
Assembled for crock pot and in the freezer for a rainy hectic day!

Saving Dinner Cookbook….in the crock pot Crock-Nutty Chicken and add brown rice and a salad and sliced french bread! The recipe seems fairly easy, but I need to get all ingredients together ahead of time…I think that took the longest. The nutty flavor is the combination of peanut butter, soy sauce, and ginger mixed in with some yummy spices and seasonings! Curious as to how this will turn out…
Variation from the Saving Dinner Cookbook….used white beans instead of true navy, came out delicious anyhow!! Very easy and will make this again!
Nice to have dinner cooking when I got home!

The mac and cheese turned out great! The garlicky greens I made a mistake of salting again at the end which killed the recipe. I will make it again omitting the step at the end. I am sure this recipe will kill any colds you might have brewing, as well as encourage people to keep their distance from you. Highly recommend chlorophyll tablets as a after dinner thought!
Recipe modified to my own ingredients on hand, basically ground beef with 1 can refried beans added browned with onion with some taco seasoning added. Took a glass casserole dish and some flour tortillas, and a can of enchilada sauce. Dumped some enchilada sauce on the bottom of the dish, and individually rolled each enchilada…first a spoon of enchilada sauce, layer of beef/bean mix, and cheese, secured with toothpicks and dumped rest of sauce on top and sprinkled with cheese. Baked 45 minutes.
YUM!
Another from the Fix-it-and-forget it cookbook….basically a can of cream of mushroom and a packet of onion soup mix, little sour cream dumped over chicken breasts…..we’ll see how it turns out!
Recipe from the Fix-it-and-Forget-it Crockpot Cookbook…..substituted beer for the water. Turned out pretty dang good, but I’d like to try some different beef stew recipes.
Tried a new delicious soup recipe from my favorite soup cookbook….Curried Turkey and Apple Soup…from the legendary Colophon Cafe in Bellingham, WA!
It is really an easy recipe, especially for left over turkey, but took me long to cook because I am so clumsy with the knives, and multitasking piece.
They have many other good soups here…the Mexican Corn and Bean Soup is incredible…and vegetarian too!
