Tonight’s dinner was entirely whole food. And it was a fantastically satisfying meal. Corn-on-the-cob, salt potatoes, grilled summer vegetables (baby zucchini, egg plant, vidiala onion, tomato, garlic), and watermelon slices. Mmmmmm, I could eat this everyday.

...Off to a good start. The recently improved salad bar at Wegs has this fantastic seven grain salad that I am crazy over! I had mixed greens with the grain salad on top and cauliflower & broccoli lightly steamed with pine nuts. Mmmmmm.
Today I had a great spinach salad with a panini and a glass of red wine while out with mom! For dinner we had mixed green salads with sprouts and lentils and fresh fruit over yogurt.
I challenge myself to buy local fruits, veggies and grains where possible and over the summer, try to eat/serve mainly whole foods!
Our family could benefit from a diet improved by more produce and the reduction of processed foods.
I am excited about this goal!
