So far so good

I’ve done really well at this in the past three months, and that (& not buying coffee from a shop) has saved me a lot of money.

But the true test will come during this next month. I’ll be back in university, where there are plenty of coffee shops and restaurants around. MUST be vigilant.



Update

Since the end of April I have managed to do this nearly every day. Sometimes I have a fabulous lunch prepared, other times I only manage to grab some random things from the fridge (cheese, a chunk of cucumber & crackers…), but overall I’m saving quite a bit of money.

One hugely time saving method has been to cook some chicken breasts, then chop them into small pieces & freeze them. That way I can just make some pasta, throw some sauce on top, and put a couple pieces of frozen chicken on top / or salad, salad dressing and chicken. By lunch it’s ready to be eaten.

Easy is good.



The quiche was yucky.

I still remember how yucky it was, even though that was a month ago.

Please people, learn from my mistake and never make a crust for quiche using brown flour. Ptooey!

In other news, I would like to announce that on Sunday, after planning to do it for 5 days, I FINALLY made beef barley soup and it was to-die-for.

And, the best part was that yes – yes!- I took some to school for lunch today, AND other people were staring enviously at my lunch and saying how good it looked. And it was.

A very successful “Pack a lunch for work” experience.



I am going to make quiche today

with the leftover “Asiago-herb encrusted salmon” I made yesterday, and then I am going to freeze some of it so I can take it for lunches once I go back to Uni in 2 weeks.



Progress

I’ve been making more of an effort to pack a lunch. Onigiri is a good lunch because it’s compact and not messy. Sandwiches are easy too.

I’d like to be able to take leftovers for lunch, butt here’s nowhere to sit at a table to eat. Soup’s out of the question for that reason.

Still, the more lunches I pack, the more money I can save – and I haven’t been very good at saving lately.



This went well

over the last week. Mostly because my boyfriend was here, and I managed to get him to make my lunch for me every day ;-p

Now I’m back on my own, and today I went to a restaurant for lunch. :-(

The food was crappy – but I guess it serves me right!!



Mediocre progress

I have packed a lunch more often since I started this goal. Not every day, but about half the time. Unfortunately twice now I have made a sandwich in the morning, then FORGOT to put it in my bag!!! Duh. Then the sandwiches sat out on the counter all day at home and I had to throw them out when I got home.

Clearly my mind is not at its sharpest in the morning.

Sigh.



I did it today.

But I need to get set up so I do it all the time. I’m wasting far too much money on lunches out! (...and I’d rather be wasting it on frivolous fuchsia shoes ;-)
