so my entire planned grocery list is now vegan :)

yum! took a basic vegan “scone” / biscuit recipe and folded some strawberries into it.

problem: soymilk gets gross when put in my coffee at starbucks! :(
so i bought a vegan cookbook by the same author as Veginomicon (check it out, best vegan one out there even though i dont own it ive used some recipes!)
i also decided on a whim to try beets for the first time and added them to my grocery basket!
tonight i made:
grated beets
in a pan with just a itty bitty bit of vegan buttery spread, apple cider vinegar, salt, pepper and paprika! SO GOOD. beets are my new love. they do stain your hands a little bit though!
steamed broccoli
with lemon juice, olive oil, salt and pepper and some ketchup to go with it!
little red baked potatoes and onions
baby red potatoes and onions sliced up, Pam sprayed, baked at 450 for 30 min, sprinkled with old bay, paprika and pam sprayed a little more, sent back in for 15. voila! yummo!
so i’m pretty excited about all of these things and thought i would share since theyre all vegan friendly!
so ive been trying to stay vegan as much as possible lately, and after finding out some snack foods and brands of bread and the like that are vegan (thanks PETA website!) its been a lot easier!
the only non vegan things i just couldnt get over so far were
Small Shamrock milkshake from Mcdonalds…uhhhh so good. i NEVER EVER eat anything at mcdonalds…i hadnt been there in over a year but these shakes are like…amazing. i need to learn how to make them vegan at home. (theyre minty)
this amazing italian appetizer when i went out to eat this weekend that had ricotta chese and amazingness. again, i never eat cheese or like heavy italian food, but it was so good.
so on a day to day basis, id say i’ve pretty much transferred over to veganity!
i am going to attempt to stock my apartment with a bunch of foods that the Student’s Go Vegan Cookbook by carole raymond suggests so that i can perhaps make some of the “quick” recipes in it. my primary concern for the whole vegan thing right now is that i am an athlete and according to my trainer i need to be getting 1g of protein per pound of body weight. which is a lot of protein, more than i feel like i can get without powders shakes or bars. which are not always completely vegan. anyways, making my shopping list:
canned beans (garbanzo, navy, black)
canned tomatoes
salsa
flour ( i ran out!)
onions, celery, carrots, potatoes
many many frozen veggies
ginger, cumin, chilli powder, thyme
maple syrup
miso
seaweed
soy sauce
polenta, quinoa, or coucous!
soooo BOSTON is playing their first game of the world series tonight. in good supporting spirits, i have decided to try the boston creme cupcakes from Vegan Cupcakes Take Over the World and make some of the regular vegan icing red to put boston B’s on the top!
pretty exciting. oh and due to the good reviews of my last vegan cupcake batch, EVERYONE wants one! :)
last night i made vegan cupcakes and icing from this book for my non-vegetarian skating coach and she loved them! she asked for the recipe for the cake and when i told her they were vegan she was really surprised :)
today i stumbled across an amazing line of vegan handbags and fauxleatherware
