1. Lasagna 11 months ago

As this is one of my all-time favourite dishes, I figured I should perfect it first. I choose a couple different recipes and combined them to my liking.

The one I mainly used was from www.smittenkitchen.com. this recipe has really delicious elements (but I made some changes – like I did not make my own noodles – heck no) although I loved the sauce and ricotta/spinach mix (i used 1 cup ricotta). I simmered the sauce for about 40 mins, so it thickened. I also used regular dry lasagna noodles (9 noodles, boiled 8mins). I fit it in a 9×9 dish; piled perfectly, used all the sauce, lots of cheese (approx 200g / half a brick). sooooooooo good, the leftovers are to die for.

Layers: sauce, 3 noodles, ricotta, mozza, parm, sauce, 3 noodles, ricotta, mozza, parm, sauce, 3 noodles, sauce, mozza, parm (be sure no noodles are peeking out the top – they need the sauce to finish cooking). 25mins with foil, then 25mins without foil.

book - Artisan Bread in 5 mins - has anyone tried it? 22 months ago

I’ve been hearing a lot about this book lately. I’m taking it as a sign. It’s called “Artisan Bread in Five Minutes a Day: The Discovery that Revolutionizes Home Baking” (note, 5 mins refers to actual working time). I’d like to try it. I’m sure the professionals deem it simply wrong, but I think it may be a good place to start.

Besides, I’m really craving a good slice of rustic baked bread, broken and drizzled with a little chestnut honey. mm mm.
