When I got back to Cocina Epic I gentled two eggs into a butter cast iron skillet. Served ‘em on two corn tortillas, a fistful of chopped green chile, and cheese, and a heapin’ side of pintos, the good seasoned kind.

Huevos Rancheros is one of the perfect foods. It can be thrown together or gourmeted, or both, and this was. The only thing missing was my partner and serving them there, like that, to share.

First I serve the salad. Then the steamed broccoli, THEN the pasta. We all get better and more veggies if the starches aren;t there first.

And the young man in the brown fur coat, shedding like a demon? Well, he doesn’t care. And I love him too. He runs to me, leaps for my attentions, stabs my body with his steely paws as he turns three times on my torso before settling for a nap. Yes, He gets well fed too.

Today I threw out a buncha coupons for fast food. Good coupons. This is serious.

My food gournal doesn’t reflect it, but big changes have already been made and will continue.
