I am eating more than when I posted the goal. But it is such a vague goal that I could really just leave it up forever. So, since technically I am eating more fruits and veggies, I will check it off. But I’m still not satisfied with my intake, so you will see more specific goals come onto the list that will hopefully help me up it even more.

Ate an orange today, and cooked broccoli two of the last three nights. Not bad, could be better . . . will keep focusing on this one.
I have definitely increased my intake, but I don’t know what my final goal is, like when would I be satisfied checking this one off? I do enjoy fruits and veg and have incorporated them into a lot of aspects of my diet – they are now indispensible whereas before they were kind of optional.
I cooked up more soups last night for lunches. It’s so good to know they are there and ready to go. In addition to being healthier and cheapter than frozen food (well, maybe not this time because I had to buy all the spices, but they’ll last me forever), it’s so convenient to pull the lunches out of the freezer and not be running late for work because of preparing lunch.
I baked up two sweet potatoes last night and have had a fruit or veg with lunch every day this week. Drawer is full of fruit for the weekend, too.
I bought some fresh fruits and veggies tonight. I had been buying small quantities as I would just leave them to go bad and hated wasting the food and the money. But tonight I bought more, because I ran out and was sad to be without for a day. So that’s good news. Plus I realized I only bring enough to have at work and so don’t have any on weekends. Anyway, made a broccoli quesadilla, that was excellent, and chopped up veggies for lunches. That seems to be key for me, preparing food ahead of time so I can just grab it in the mornings, because I’m usually in a rush. Also got hummus rather than dressing for a dip. Yum yum.
I made up 20 lunches yesterday for the freezer, and they all have veggie components, some more than others. This is cause for pride. I ate a sweet potato at lunch and stuck spinach in my dinner sandwich. yeah!
So, my initial analysis is that this situation is dismal. Simply dismal. There were actually days last week when I ate zero fruits or veggies. And I don’t take any vitamins. So, this weekend I’m going to cook up some veggie-licious dishes to freeze for work. That works best for me to get good food in me, and it’s cheap.
