Sushi making is an art from. I lived in Hawaii for over 7 years which is where I was introduced to good Sushi. The chefs I knew had gone through a seven year apprenticeship to become sushi chefs. I had a favourite restaurant “Lemon Grass” on Kauai, where 3 chefs worked. Even though 90% of the time they made the same roll, I was able to tell who made it from the style and presentation. I would love to be able to make some of their “signature” rolls, but fear that I never will. Next best thing, I will host a sushi party one day and hire a chef to make rolls to order….One day.
